When I&amp;#39;m cooking for my dad, I use none, and the recipe still works fine. Normally we did a horseradish-crusted bistro filet with bleu cheese mashed potatoes - is that the one?  Or is it the marinated skirt steak - we did that with the potatoes a few times, but it was on the menu all the time.
